Smoke House Story |
| T H E K A C E R K I E L B O S S A S M O K E H O U S E This Slovaks story!  Plan 1: In the beginning, Kacer's Market didn't have a smokehouse. My Dad and I would take it to another friend's market about 10 miles away and he would smoke it for us. This went on for a couple of years, then Dad decided to get one (or should I say, build one ) for our store! The first one was actually a former refrigerated truck box (they were a lot smaller back in those days). This seemed like a pretty good idea at the time, but, because Dad didn't own the store real estate . . . he placed it in his own backyard about a block away. When you opened the doors on the back of the truck, there was a steel plate on the floor while the rest of the box was plywood. All "seemed" okey dokey for a while, although it was a challenge. Uncle Pete would go down with me to help hang the kielbossa on these long 8' pipes. We didn't have too many poles, but trying to fill or empty them was a trip.
After a couple of years, a bitterly cold February day came calling upon Waymart while the kielbossa was smoking. Mom called the store from the house to ask if we were "smoking?" When Uncle Pete asked why, Mom replied that the fire must be pretty hot 'cause she could see flames coming out of the roof! Well, we went running down the block like a cat with a firecracker tied to it's tail. As sure as God made little green apples . . . there was our first smokehouse . . . going up in flames. |
Plan 2: Needless to say . . . we were back to smoking our kielbossa at another friend's place. After a couple of trips, Dad decided it was time to find an alternative plan . . . BUILD OUR OWN! Building a cement block smokehouse was a great idea, but, that would've cost quite a few Benjamin Franklin$. So, on to . . . | | Plan 3: Our current smokehouse is a steel structure originally built for a fire company that was going to use it as a hose dryer of some sort. That idea never materialized and somehow . . . the structure ended up in Uncle Pete's backyard. One day, it mysteriously ended up in the backyard of Kacer's Market and became . . . the smokehouse that we still use to this day! We've had our share of moments with it (burned off a few doors, had a tree fall on it, buried in snow, fell off the cinder blocks) but . . . that baby is still smok'n along after all these years. As you can probably tell by these stories . . . it takes a lot of perseverance to keep smoking our kielbossa the Kacer way. Just like Dad taught me. Maybe that's why we have so many repeat customers. Our kielbossa has chutzpah and character . . . just like the characters we've had fun making it with. I suppose you could buy pre- packaged kielbossa from one of those "Super Stores" that carry everything from office furniture and DVDs, to fried chicken and flower pots, but, if you're looking to sink your teeth into the best kielbossa you've ever tasted, cooked the Kacer way . . . we welcome your business.
